Step 1: find the breeding site
A fruit fly goes from egg to adult in about 8-10 days at Indian room temperature, and needs only a film of fermenting organic matter. Check, in this order:
- Floor drains and the grease trap — the most common source.
- Under and behind the fridge, freezer and prep tables.
- Onion, potato and banana crates; any soft or sprouting produce.
- Bin interiors, bin liners and the trolley they sit on.
- Mop heads, mop buckets and cleaning cloths left damp.
- Dregs in soft drink crates, curd tubs and empty syrup bottles.
- Water trays under water purifiers and coolers.
Step 2: clean it out (the part that actually works)
- Remove all affected produce from the premises — not to the back door.
- Scrub drains with a stiff brush, then treat with a drain enzyme or bio-gel overnight. Boiling water alone does not remove the biofilm they lay eggs in.
- Wash bins inside and out with a degreaser; dry before re-lining.
- Pull out equipment and degrease the floor beneath it.
- Wash and dry all mops and cloths; store mops head-up.
Step 3: knock down the adults
- Vinegar trap: a bowl of apple cider vinegar with one drop of dish soap, covered with cling film pierced a few times. Set 3-4 around the kitchen overnight.
- Wine or beer dregs work as well as vinegar.
- Insect light traps (glue-board type, never electrocuting units over food areas) are the commercial standard.
- Avoid aerosol insecticide sprays anywhere near food, packaging or contact surfaces.
Step 4: keep them out
- Refrigerate ripe produce; buy fruit in smaller, faster cycles.
- Close-down drain treatment twice a week.
- Lidded bins, emptied at every shift change.
- Fly screens on windows and an air curtain at the dispatch door.
- Monthly pest control visit with a signed log — keep it on file.
