The biggest mistake first-time operators make is trying to cook everything. Cloud kitchens win with a tight menu — 15 to 25 dishes around one strong theme (biryani, healthy bowls, North Indian thalis, Chinese, desserts). A focused menu means faster prep, less wastage and a memorable brand.
2. Choose the right location
You don't need high-street rent — pick a 200-400 sq. ft. space within 4–5 km of your target customers. Look for areas with strong residential density, IT parks or hostels. In Hyderabad think Madhapur, Kondapur or Manikonda; in Bengaluru, HSR, Koramangala or Whitefield.
3. Get your FSSAI licence

4. Set up the kitchen

5. List on Swiggy and Zomato
Both aggregators charge 18–28% commission but bring instant discovery. Prepare high-quality food photos, a clear menu PDF, FSSAI certificate, PAN and bank details before onboarding. Expect 7–15 days for activation.
6. Build direct channels too
Aggregator commissions eat margins. From day one, capture WhatsApp orders, publish your kitchen on directories like Cloud Kitchen Adda, and run Instagram to build repeat customers who order directly.

How much money do you need?
A lean cloud kitchen in a Tier-1 city can launch with ₹4–8 lakh — equipment (₹2–3L), 3-month rent + deposit (₹1–2L), FSSAI + registration (₹10–20K), initial raw material (₹50K), packaging (₹30K) and marketing (₹50K–1L). Multi-brand or premium kitchens can go up to ₹15–20 lakh.
