Virtual restaurant — the short definition
A virtual restaurant (sometimes called a virtual brand or online-only restaurant) is a food brand that customers can only order from through delivery apps. There is no storefront, no signboard, no dine-in tables. The food is cooked inside an existing cloud kitchen or even inside a running restaurant's back kitchen.
Virtual restaurant vs cloud kitchen vs ghost kitchen
- Cloud kitchen: the physical kitchen infrastructure — a delivery-only kitchen space with FSSAI licence, equipment and staff.
- Virtual restaurant: the brand on Zomato/Swiggy — menu, name and food photos. One cloud kitchen can host multiple virtual restaurants.
- Ghost kitchen: another name for a cloud kitchen, more common in the US.
Why virtual restaurants exist
A single kitchen can list 3–6 virtual brands (biryani, rolls, pasta, desserts) and capture more of the aggregator search page. Each brand targets a different cuisine keyword — "biryani near me", "pasta near me", "brownies near me" — and shares the same cooking staff, gas and rent. Operators call this a multi-brand cloud kitchen.
How to start a virtual restaurant in India
- Get an FSSAI licence for the physical kitchen address (all brands can operate under one licence at that address).
- Design a focused menu — 15–25 items per virtual brand.
- Register each brand separately on Zomato and Swiggy — different name, logo, menu, food photos.
- List the kitchen on directories like Cloud Kitchen Adda so customers searching outside aggregators can also find you.
- Run brand-specific ads on Swiggy/Zomato to seed the first 100 orders.
Examples of virtual restaurants
Well-known virtual restaurant operators in India include Rebel Foods (Faasos, Behrouz Biryani, Oven Story, Sweet Truth) and Box8. In the US, MrBeast Burger was a purely virtual brand run out of existing kitchens for years. The common thread: no dine-in, delivery only, one kitchen powering many brands.
Is a virtual restaurant profitable?
With shared rent, staff and equipment, gross margins on virtual restaurants can be 10–20% higher than a standalone cloud kitchen — provided at least one brand hits scale. The failure mode is spreading too thin: 6 mediocre brands earn less than 2 great ones.
