How much space you actually need
- 250-350 sq ft — one brand, up to ~60 orders a day.
- 400-600 sq ft — two brands or 100+ orders a day.
- 800+ sq ft — three or more brands, multi-cuisine.
Ground floor with independent access matters more than total area — riders should be in and out in under 90 seconds.
The five zones, in order
- Receiving & storage — dry rack, chiller, freezer. Keep near the entrance so raw material never crosses the cooking line.
- Prep — cutting, marination, batter. Needs the most counter length; allow at least 6 running feet.
- Cooking — burners, tandoor, fryer, oven under a single exhaust hood.
- Packing & dispatch — a dedicated 4-5 ft counter near the door with containers, labels, cutlery and bill printer.
- Washing — three-sink system, kept away from the packing counter.
The golden rule: one-directional flow. Raw goes in at one end and packed food leaves at the other, never crossing.
The packing station is the bottleneck
Most kitchens over-invest in cooking equipment and under-invest in packing. At peak, orders queue at packing, not at the burner. Give it its own counter, its own person, pre-labelled containers and a printed checklist per order. This alone cuts late dispatches dramatically.
Ventilation and safety — non-negotiable
- Exhaust hood with baffle filters and an outdoor duct.
- Fresh-air fan; a sealed kitchen at 45°C loses staff, not orders.
- Two ABC fire extinguishers plus a fire blanket.
- Non-slip flooring with a proper drain slope.
- Pest-proof mesh on all openings — an FSSAI inspection item.
Fit-out budget
- Civil, tiling, plumbing, drainage: Rs 60,000-1,80,000
- Electrical and lighting: Rs 30,000-70,000
- Exhaust and ducting: Rs 40,000-1,20,000
- Stainless steel tables, shelves, sinks: Rs 60,000-1,50,000

Choosing the location
You are optimising for delivery radius, not footfall. Look for a spot within 3-4 km of your target residential or office clusters, with three-phase power, water storage, and a landlord willing to sign a commercial food use agreement.
