The minimum viable team

• Head cook / chef — owns recipes, consistency and indenting. Rs 22,000-40,000 in metros, Rs 15,000-28,000 in tier 2.
• Commis / helper — prep, cutting, batch cooking. Rs 11,000-16,000.
• Packer / dispatcher — packing, labelling, handover to riders. Rs 10,000-14,000.
• Cleaner (part-time) — Rs 4,000-7,000.

Four people handle roughly 60-80 orders a day comfortably. Add one helper for every additional 40 orders.

Shift planning that matches delivery demand

Delivery demand in India is brutally peaked: 12:00-14:30 and 19:00-22:30. Do not staff a flat 12-hour day.

• Prep shift 08:00-12:00 — cook and helper do all base gravies, marination and rice.
• Lunch peak 12:00-15:00 — full team.
• Break 15:00-18:00 — skeleton staff, cleaning, indent.
• Dinner peak 18:00-23:00 — full team.

Keeping staff cost under control

1. Batch prep. A kitchen that cooks bases in the morning needs fewer hands at peak.
2. Standard recipe cards. Written gram-level recipes mean a helper can cover for a cook, so you are not paying for redundancy.
3. Multi-brand from one team. Two virtual brands cooked by the same four people is the cheapest way to grow revenue per salary rupee.
4. Pay slightly above local market. Attrition costs more than a Rs 1,500 raise — retraining wrecks consistency and ratings.

Compliance basics for staff

• Medical fitness certificates for all food handlers (FSSAI requirement).
• FoSTaC food safety training for at least one supervisor.
• Shop & Establishment registration once you employ staff.
• ESIC and PF once you cross the applicable employee thresholds.
